Cooking Creamed Corn
In Kentucky, it is a must to have dinner with my whole family on Sunday evenings. We sit and talk while granny is cooking. The meal typically consists of the same contenders: savory buttered mashed potatoes, sweet creamed corn, stuffing, devilled eggs, ham or steak, fruit salad, pasta salad, and warm soft rolls. My favorite parts of the meal are the mashed potatoes, creamed corn, and rolls; I always request them when I go down to visit granny. The mashed potatoes are warm, soft, and doused in butter; the creamed corn is sweet and savory; and the roll’s swirly steam clouds dance out as you split it. Of course I love the other parts of the meal, but I’m not in Kentucky often and I try to enjoy every moment while I’m there. Therefore, my granny intentionally makes extra rolls, creamed corn, and mashed potatoes when I’m home since she knows how much I love them. In fact, the other day my granny called to inform me that she is starting to save creamed corn in the refrigerator because my birthday is coming up. Every year my granny and Aunt Carly come to Chicago for the weekend to spend time with me, which usually consists of going to volleyball tournaments. Since the a tournament is held on my birthday every year, we rarely get to catch up, but when we do it is typically when we are eating. Every year my granny gives me creamed corn to eat for my birthday, so when she comes over we can cook it together, and then sit and eat it with my mom and aunt. I can’t wait to see them on my birthday this year!
